Sourced from smallholder farmers across the highland communities in verdant Chiapas, Mexico, this coffee grows between 900–1,350 meters. Farms are shaded by native trees that nurture biodiversity and support local honeybee populations which are a vital part of pollination and community livelihoods.

The cherries are handpicked and honey-processed at a modern mill that prioritizes quality control and traceability. After de-pulping, the parchment is sun-dried on raised beds, intensifying body and sweetness while softening acidity. This process brings out malt and chocolate tones lifted by a touch of citrus brightness, giving the cup a layered yet balanced character.

Fun Fact: Many Chiapas farmers also harvest honey alongside coffee. Bees are critical for pollination, and the honey they produce adds an extra stream of income... it's a perfect symbol of the region’s harmony between craft, ecology, and community.
