PAPUA NEW GUINEA Highlands
PAPUA NEW GUINEA Highlands
Tasting Notes: Dark Chocolate, Black Cherry, Mild Spice
Processing Method: Washed
Roast Level: Medium-Dark
Acidity: Low
Why this Bean: Rugged and wild... that's what comes to mind when we think about coffee from PNG's Highlands region. By roasting medium-dark, we highlight this bean's intrinsic deep chocolate flavor that underlies a smooth and subtle stonefruit sweetness. Lastly, be sure to catch a whiff of that fragrant spicy aroma right after you grind your beans... you won't want to miss it!
Know your Coffee: Red Bourbon and Typica varietals grown at high altitude (1,800 to 2,100 meters above sea level) and cool climates.
About the Producers: this coffee is grown by smallholders on farms between 0.25 and 4 hectares with ~70% of the Highlands population still dependent on subsistence agriculture and small plots of coffee trees. Because synthetic fertilizers and pesticides are unknown and unobtainable (due to cost and logistics), farming practices in this area are nominally organic.
