Production

This coffee was grown in Guji, a zone in Ethiopia's Oromia Region. Guji is known for lush forests, unique microclimates, and heirloom varieties of coffee cultivated by smallholder farmers. Growers (with <5 hectares per farmer) generally use traditional farming methods and little-to-no fertilizers or pesticides, resulting in production that is largely organic-by-default.

At elevations of 1,850–2,000 meters, coffee cherries are selectively handpicked and fully washed, then fermented for about 24 hours before being shade-dried on raised beds. Each lot is meticulously sorted and graded to ensure clarity and consistency in the cup.

Fun Fact: Guji’s coffees were once grouped under Sidamo, but their distinct terroir and cup character earned the region a reputation for producing some of Ethiopia’s most balanced and expressive coffees.
