Why this bean: it took us a couple of tries to figure this bean out. Its bittersweet chocolate flavor drew us in and as we went down the rabbit hole we found brown sugar sweetness and a mellow citrus flavor… that said, we could not ignore the underlying spices. Truly, this bean embodies the ‘nuanced’ descriptor for its category.
About the Origin: this coffee was produced by various smallholders who harvest these beans between November and March in the Jinotega region at altitudes 1300 - 1700 MASL. Although Nicaragua is known for a broad range of varieties, this particular been contains Caturra, Catuai, Typica, and Catimor varieties.
Washed Processing: Coffee cherries are sorted for consistent ripeness then sent through depulping machines to remove the pulp / skin and then fermented to remove the mucilage. Lastly, the coffee is dried till it reaches the desired moisture level.
