Immediately after grinding this bean, we get a beautiful waft of spice (clove) with an underlying tropical fruit sweetness. Once brewed, that sweetness, reminiscent of decadent passion fruit, comes bursting out and carries you to a smooth but complex finish.

About Production

An Anacafe 14 variety, i.e., a naturally occurring cross between Pacamara and Catimor varieties

This coffee is grown at 1500 MASL on a 60-acre farm known as Finca Himalaya and owned by Mauricio A. Salaverria. The coffee cherries are picked ripe, then dry fermented for 20 hrs, before being dried on raised beds for ~24 days. This honey processing is what gives this coffee that beautiful fragrance alongside a juicy fruit flavor.
