Why this Bean

This washed Ethiopia coffee does not disappoint! It produces a bright (and sunny) cup with an easily discernible floral fragrance (like jasmine) and mellow fruity sweetness (we taste clementine). We've thoroughly enjoyed this bean black, prepared as pourover, drip, and espresso.

About Production

Who wouldn't want beans from the birthplace of coffee? Ethiopia might only produce <5% of the world’s coffee, but the beans speak for themselves. They are known for their bright fruity and floral flavors and with notable profiles from Yirgacheffe, Sidama, and Guji.

That said, this particular coffee from Yirgacheffe is a combination of Wolisho and Dega varieties.

Grown in the Chelbesa kebele (village) which is a renowned producing area, this coffee is shade-grown under a dense forest canopy. The ceramic fermentation tanks at the Chelbesa mill bring clarity to the coffees and stimulate the fermentation process with better heat retention.
