Two Years of Katï Coffee

Katï Coffee is two years old!

What began as a passion idea, navigated its way through countless firsts (first roasts, coffees, customers, collaborations...) during year one.

Year two has been different: we focused more on what was happening behind the scenes.

Here's what we've been up to.

 

Building a stronger foundation

This year, we spent more time strengthening the engines that keep Katï running. That meant refining systems, improving training, building better routines, and thinking more carefully about how the roastery operates as a whole.

We also invested in new roasting equipment, including the ROEST P3000, which gives us more room to test, fine tune, and stay curious about what different coffees can become.

That is the balance we want to keep building toward: stronger systems without losing the curiosity that made us fall in love with coffee in the first place.

The goal is not simply to roast more coffee. It is to keep getting better at understanding what each coffee has to offer.

 


Being more deliberate about coffee

That same thinking has shaped our coffee lineup.

We still love discovering a new coffee and finding the right way to roast it. But we have also become more deliberate about what we release and when. Not every month needs something new.

Our seasonal single-origin coffees will continue to change throughout the year, but there is also value in having coffees you can simply come back to.

MINERVA and HELIOS have become part of that rhythm for us. They are designed to offer familiar profiles throughout the year, even as the coffees around them change.

There is room for both: something familiar, something worth exploring.

Building Long-lasting Relationships

We also got clearer about how we want Katï to participate in the community around us.

In our first year, we supported several different organizations. This year, we made a more deliberate decision about where we want to build longer-term relationships.

Going forward, Brookwood in Georgetown (BiG), and Texas State Technical College (TSTC) are two organizations we plan to support consistently. Narrowing our focus means being more intentional about where we build long-lasting relationships.

Our relationship with BiG has already given us some memorable days in the roastery. We have had the chance to roast coffee alongside BiG citizens, share more of the work behind each bag, and spend time together around something we all enjoy.

We are also proud to support TSTC and the opportunities it creates through education, workforce development, scholarships, and student support.

What we’re choosing to keep

If year one was about discovering what Katï could be, year two has been more about deciding what deserves to continue.

Keep learning.

Keep improving the coffee.

Keep building systems that make the work more consistent.

Keep investing in the people doing that work.

Keep showing up in the community around us.

And keep leaving room for curiosity.
